A caffeine-free herbal tea brewed from the deep-blue flowers of butterfly pea (Clitoria ternatea), a Southeast-Asian and global-café staple; the brew turns from blue to purple when acid such as lime is added. It carries the blue anthocyanin pigments (ternatins) and other polyphenols.
